For my own needs, I wanted to have GridJS be editable on double click. See code changes and quick demo video here.

I can add additional tests, turn this into a parameter that is part of gridjs set up, etc. But I'm happy running on a fork, so not an urgent change. Happy to hear feedback / thoughts.
