Microsoft 365 is now Microsoft 365 Copilot, an AI-forward Copilot app where Copilot is the core workflow and cannot be disabled independently on the mobile app. Other Office workflows are being redirected to the OneDrive, Word, Excel, and PowerPoint apps.

If you wish to restrict usage of Copilot in your organization, use the Integrated Apps settings to block it across web, desktop, and mobile. Alternatively, block the Microsoft 365 Copilot mobile app to restrict access to Copilot on mobile only.
